There’s something magical about great dough, tomato sauce, and cheese layered together, piping hot out of an oven. And I’m usually willing to drive pretty far for great pizza offerings so imagine my excitement when I found out about Frasketta Romana Pizza! Based out of Angier, this food truck stops mostly in Southern Wake county but recently found a home in Apex. If you’re a pizza lover, read on because I think you’ll enjoy the rest of this story.

After checking out their Instagram account, I noticed that Frasketta Pizza Romana was scheduled to be at Cotton Craft Brewing. As I walk over, I immediately spy their bright red food trailer at the parking lot. I grab a beer inside Cotton Craft and then popped outside to check out their menu. Eight types of pizza between $12 and $18 along with some drinks, count me in as a happy boy. I ordered up a Margherita and a Amatriciana pie, paid (about $30) and got a ticket.

Frasketta Pizza Romana pizza crust – nctriangledining.comAfter about a 30 minute wait (there were several people in front of me), I get a call out to the truck and grab my two pizza boxes, woo-hoo! Inside I take a look at the pizza gloriousness that’s been handed over to me and wow! The margherita pie is about 12″ square and shows off a nice tomato sauce base, melted mozzarella and fresh basil on top. The Amatriciana is even more impressive, offering thinly slice guanciale (smoked pork cheek) topped with nutty pecorino (Romano) cheese and red pepper flakes. Probably the most distinctive part of Frasketta’s pizza is the crust. It’s about 1″ thick, light and airy with a beautiful open crumb. Think pan pizza but a lot lighter and with high quality ingredients.

My base pizza (Margherita) is excellent with high quality tomatoes, fresh tomato sauce, and basil making for a classic Itailian bite. I usually get a super simple pizza style when I first try out a new spot to make sure it’s taking care of the basics, it’s a good way to identify a quality pie. And this pizza is lovely, a really top-notch slice with chew and deliciousness. But the Amatriciana takes things to another level with the salty pork, spicy red pepper on top of that great crust. A really wonderful take on a classic flavored pizza with some spiciness to boot, there was just enough heat to get your attention.

A peek at the crust shows off a beautifully baked pie with a bit of char underneath. Frasketta is putting out a great pizza and a chat with Claudio, the owner and chef running Frasketta, confirms things for me. He’s the real deal Italian and works to get the best imported ingredients for his authentic Roman pizzas. And in all honesty, it’s a decent price for what he’s offering up. Given I haven’t been to Italy yet, Frasketta’s Pizza Romana is a special treat for me. Light, airy crunchy with all the flavor and savory of my favorite pizza. Make the effort to find this food truck. If you love pizza, you’re gonna love Frasketta Pizza Romana. And thankfully, they’ve found a semi-permanent location in Apex. Can’t wait for my next visit, definitely need to try a lot more off their menu!
